A Chocolate Tradition

One of my mom's favorite cakes to make is the Dark Chocolate Amaretta Cake. It took some convincing to have it "unlocked" from the Davis' recipe vault since it is one of her signature recipes. Thanks mom for sharing!
A couple weeks ago the kids and I heading to Alabama for a quick visit. The Dark Chocolate Amaretta Cake was on the menu! This time I made it and thought it was a must to share on my blog.

Dark Chocolate Amaretta Cake
1 box Devil Food Cake
1 small pkg. instant chocolate pudding
1 1/4 cup water
1/2 cup oil
1 Tbsp. Almond Extract
4 eggs
2 cup Chocolate Chips

Mix and beat the first 6 ingredient as you would a cake mix. Stir in 2 cups of chocolate chips. Grease and flour bundt pan. Bake at 350 for 45-50 min. Cool in pan for 10 minutes.

Ganche:
1 Cup Chocolate Chips
1/2 cup Amaretta Liquid Creamer (you can find it at Publix)

Place in glass bowl and microwave for 15 second and stir. Repeat until smooth (probably only 45 seconds total) Be careful because the chocolate can burn! Drizzle on cake.
